At Plaza Indonesia, Noesaka showcases regional Indonesian dishes, from comforting classics to spice-forward specialties, curated for today’s urban diners while preserving the soul of traditional flavors. To mark its opening, Noesaka presents a special collaboration with William Wongso, Indonesia’s most respected culinary figure and a global ambassador of Indonesian gastronomy. 

Exclusive Collaboration: Noesaka × William Wongso

This exclusive menu, titled “Jejak Rasa”, is available at Noesaka Plaza Indonesia. Inspired by Stories of Indonesia, Expressed Through Flavor, Jejak Rasa reflects the meeting of two journeys: William Wongso’s lifelong exploration of Indonesia’s culinary heritage, and Noesaka’s commitment to bring Nusantara cuisine forward in a way that feels thoughtful, relevant, and approachable today.

Every dish in Jejak Rasa carries a memory of a place once visited, a flavor carefully preserved, and a table where stories meet. Guided by William Wongso’s culinary journeys and brought to life through Noesaka’s kitchen, each dish represents a culinary footprint shaped by place, experience, and tradition.

  • Rendang Pipi Sapi – khas Padang (IDR 128.000++)

Beef cheek slow-cooked in aromatic Padang spices creating a tender texture and rich flavor.

  • Tuna Gohu – khas Ternate (IDR 78.000++)

Fresh tuna belly dressed with warm coconut oil, combined with creamy coconut milk, roasted candlenuts, pomegranate, a touch of citrus for a refreshing yet rich balance.

  • Sop Binte Biluhuta – khas Gorontalo (IDR 68.000++)

A comforting Gorontalo-style sweet corn soup with shrimp, grated coconut, fragrant basil leaves, and a hint of calamansi lime.

  • Udang Tangkap – khas Aceh (IDR 168.000++)

Crispy prawns fried with aromatic curry leaves and a bold blend of Acehnese spices.

  • Pepes Shisamo Bumbu Hitam – khas East Java (IDR 68.000++)

Shisamo fish marinated in traditional East Javanese black spices, wrapped in banana leaves and gently grilled for a smoky finish.

  • Nasi Goreng Merah – khas Surabaya (IDR 88.000++)

Surabaya-style fried rice cooked with signature red spices, served with shredded chicken and meatballs.

  • Rawon Pipi Sapi – khas East Java (IDR 128.000++)

Beef cheek slow-braised in a rich East Javanese black ‘keluak’ broth, served with bean sprouts and shrimp paste sambal.

  • Satu Wagyu Maranggi – khas Purwakarta (IDR 148.000++)

Grilled wagyu beef skewers marinated in traditional Purwakarta spices, served with sweet soy sambal.

Traditional Dessert

  • Jongkong (IDR 68.000++)

A traditional Javanese dessert infused with pandan and suji leaves, served with jackfruit coconut sauce and palm sugar syrup.

  • Surabi Pandan Durian (IDR 68.000++)

A West Javanese pandan pancake served with durian sauce and coconut ice cream.

Beyond the exclusive “Jejak Rasa” collaboration with William Wongso, Noesaka Plaza Indonesia also offers a selection of signature Indonesian favorites that further showcase the richness of Nusantara cuisine. Guests can enjoy comforting classics such as Batagor and Siomay made with mackerel fish, authentic Palembang-style pempek, Bogor’s iconic soto mie, and Pontianak-style meatballs — reinforcing Noesaka’s commitment to presenting diverse regional flavors in one thoughtful dining experience. These exclusive menu will be launched first at Noesaka Plaza Indonesia and following by at Noesaka One Satrio and Lands End.
